Try these cupcake tips Here are a few cupcake-baking tips:
» If you are making cupcake batter from scratch, have all ingredients at room temperature before you begin mixing.
» Don't overmix the batter.
» Add sprinkles, nuts, crushed candy or fruit to batter just before filling cupcake pans.
» Use shiny, heavy cupcake pans. Dark-colored pans will cause batter to cook faster.
» Line cupcake pans with paper or foil liners for easy cupcake removal.
» Don't overfill cupcake pans. Fill each cup 1/2 to 1/3 full for a nicely rounded cupcake.
» Each cup of standard cupcake pans hold 1/4-1/3 cup batter.
» Each cups of mini cupcake pans hold 1 heaping teaspoon batter
» To fill cupcake pans, use an ice cream scoop, piping bag or measuring cup to ensure the same amount of batter in each cup.
» Bake cupcakes on the middle oven rack for 18-22 minutes.
» Test for doneness by inserting a toothpick or small dowel into the cupcake. If it comes out clean, the cupcakes are done.
» Cool cupcakes thoroughly on a wire rack before icing.

It's a cupcake world these days; cupcakes are everywhere. There are cupcake stores, cupcake wedding cakes, cupcake trees and cupcake wars on television. I'm not sure how cupcakes got to be so popular, but they did and they are. And cupcakes aren't just the mundane flavors we're used to, they now contain a wide array of flavors and ingredients ranging from chipotle chile to lavender.

When it comes to making cupcakes, I usually take a little help by using a cake mix. To be perfectly honest, I don't think I've ever make a cupcake from scratch that equaled a cupcake made from a Duncan Hines mix.
